Allspice or Sarvasugandhi is the dried and unripe fruits of Pimenta dioica (a tree native to warm climates across the world), widely used as a spice in many of the cuisines. It is known by different names like Jamaica pepper, English pepper, Newspice, Turkish Yenibahar or Myrtle pepper. The name ‘Allspice’ is due to its combined flavour of cinnamon, cloves and nutmeg. The green and unripe fruits (berries) are picked and traditionally dried in the sun to form brown coloured smooth peppercorns. Whole dried fruits have a longer shelf life when compared to the powdered product and has a more aromatic presence when freshly grounded before the use. Allspice is known to be the most important ingredient of the Caribbean cuisine. It is also used as an ingredient in commercial sausage preparations and curry powders. Barbecue sauces make use of this aromatic ingredient for its preparation.
