Dried Meat, Idiyirachi or Unakka Erachi
Dried Meat, Idiyirachi or Unakka Erachi is known to be one of the specialities of Kerala cuisine. It is used in making some tasty side dishes that goes very well with boiled rice and rice gruel (Kanji). These well-dried meat pieces have a dark reddish brown colour and can be stored for long periods. Unlike soft raw meat, these dried ones are hard and make use of Kerala grind-stones (Arakallu), mortar and pestle or mixer for crushing. Sun drying or smoking are the two main ways for drying raw meat. Dried meat is kept immersed in water for 1 to 1½ hours before use, which will remove any smoke flavour and inturn make it soft enough for crushung. Kerala grind-stones (Arakallu), mortar, pestle or mixer is used for crushing. Crushed pieces are fried in oil along with coarsely grated dried red chillies, black pepper, garlic pieces, curry leaves and salt.
