Masala tea or masala chai is a tea variety flavoured with a mixture of aromatic Indian spices and herbs. It has its origin in India. Masala tea has gradually gained popularity all over the world. Traditional masala chai or tea has a decoction of cinnamon sticks, green cardamom pods, black peppercorns, ground ginger and cloves along with black tea leaves. There is no such specific recipe for Masala tea, people from different regions of the world have different versions of tea. However, all masala chai or tea varieties has the following four basic components:
- Tea base: - Base is usually taken from a strong black tea variety, so that the taste of spices and sweeteners wouldn’t overpower the tea flavour.
- Spices: - Traditional masala chai or tea has a decoction of cinnamon sticks, green cardamom pods, black peppercorns, ground ginger and cloves.
- Milk: - Normal masala tea or chai preparation involves the mixing of ¼ to ½ parts milk with water. Some people also use water in place of milk.
- Sweetener: - Several sweetening agents like plain white sugar, brown coloured sugar, palm or coconut sugars, honey or jaggery can be used.
