White pepper is normally used in light coloured dishes and sauces. It has a bit hot, little bit winey as well as an earthy taste. White pepper has a less spicy taste when compared to other pepper varieties. It is prepared from green coloured berries. The outer shell is then removed either by soaking the berries in water or by placing them under flowing spring water, yielding a whiter cleaner pepper. White pepper is widely used in Indian, Asian and Mexican cuisines. White pepper goes well with cumin seeds and provides a real taste to several dishes like casseroles, pies, creamy shrimp and scallop sauces, mayonnaise and cream based soups.
