Brinjal is a very common and affordable vegetable, also known by the name Baigan. In raw form, these doesn’t have an agreeable taste, once cooked becomes tender and develops a rich flavour. These delicate, tropical perennial plants are often cultivated as a tender or half-hardy annual in temperate climates. The plants stay for long durations, resistant to bacterial wilt and provide light green coloured fruits which are suited for kitchen garden.
